The use-by date on ham is the last day that the product should be eaten to avoid food poisoning, but it is safe to eat cooked ham after this date. All meat products including ham need to be heated thoroughly before eating, as raw meat may contain harmful bacteria like E. coli and Salmonella.
Raw ham includes an enzyme known as “catalase,” which breaks down the hydrogen peroxide created by bacteria to protect against foodborne illness. When cooked, however, ham contains no catalase. Without the protective enzyme, the hydrogen peroxide that accumulates in cooked ham can create a growth environment for harmful bacteria. For this reason, it is important to use cooked ham within three days of its use-by date.
