I keep jalapeños in an airtight container, such as a tupperware. I place them on the very top shelf of the fridge so they don’t touch other foods which could spoil their taste. I cut off the tops of the peppers and remove any seeds. If there is any mold on the skin of the pepper, discard it and continue to cut open and remove seeds and ribs.
