Once jars are frozen, they should be stored in a place that can maintain a temperature below 30 degrees Fahrenheit (-1 degree Celsius) to prevent deterioration and freezing damage.
To freeze Roma tomatoes, first wash the tomatoes and core them. Slice the tomatoes into 1/2 inch wedges and place on a parchment-lined baking sheet. Place the baking sheet in the freezer for two hours, then transfer frozen tomato slices to freezer-safe storage bags or containers. Store in the freezer for up to three months.
Can I freeze celery?

Lettuce can be frozen and is a fantastic ingredient in salad dishes when it’s in season. Lettuce is not the most nutritious vegetable to freeze, but frozen lettuce will retain its crispness and crunch when thawed.
Lettuce can be frozen for up to 6 months. For best quality, freeze the lettuce in the original package and remove as much air as possible before sealing it in a freezer bag. Label and date the bag and store in the freezer’s coldest part. To use, let thaw in the refrigerator or under cool water. Wash thoroughly before serving; we recommend soaking in salted ice water for 5 minutes and then rinsing with clear water 3 times.
